The more photography you have experience of the more you settle on just one metering mode. If you master the use of EV compensation you aim to do away with worrying about metering modes completely. The important lesson is to remember that the adjustment of EV is dependant on the metering mode used. For example, if you are using Spot Metering the EV adjustment is only applied to the area being metered, and not the full scene like in Evaluative metering. You will find you need more or less EV adjustment depending on which metering mode you are using. For wedding photography (ie people) I've always prefered Centre Weighted metering - it just seems to give you a better starting point if you need EV
adjustment, particulalry in brighter conditions.
